Spicy Meat Skewers
It's always handy to have recipes using mince so that you can rustle something up quickly. These skewers can be cooked on the barbeque or just grilled
2lb minced beef
2 onions, finely chopped
1 tbsp ground cummin
1 tbsp ground coriander
6 tbsp chopped parsley
1 tsp paprika
salt & pepper to taste
a little olive oil
lime slices to serve
quantity wooden skewers – soaked in water until needed
Mint Yoghurt Sauce
3 spring onions, chopped
300 ml natural yoghurt
1 tbsp chopped mint

Ask the butcher to mince the beef twice or put it in the processor until very fine. Knead it together with the onion, spices, parsley and seasoning to make an even consistency.

Take about a tablespoon of mixture and press a sausage type shape around the pointy ends of the skewers. Brush with olive oil and sprinkle with pepper

Grill for about 5 mins each side, trying to keep the bare sticks away from the heat to avoid burning. Sprinkle with parsley and squeeze with a little lime.

While the meat is grilling, make up the sauce by stirring all the ingredients together

Serve on a bed of rice with a crisp salad
